The ingredients that you will need to buy are: 2 pounds of boneless pork tenderloin chops that are cut crosswise into ½ inch pieces. 2 tablespoons of unsalted butter, 2 cups fresh mushrooms, sliced. Extra whole mushrooms, ¼ cup finely chopped onions, 1 tablespoon fresh Rosemary, chopped. Or 2 teaspoons dried and crushed Rosemary. ½ teaspoon celery salt, 2 cloves garlic, minced and 2 tablespoons dry vermouth.
To make this dish you need to press each piece of pork to about 1 inch thickness. Melt the butter in a heavy nonstick skillet over medium heat. Sauté the pork for 2 minutes on each side. Remove the cooked pork from the heat. Place the cooked pork onto a serving plate and reserve the drippings. Keep the serving plate warm.
You will then need to add the next 5 ingredients and pepper to taste into the skillet with the reserved pork drippings. Cook over low heat for about 2 minutes, stirring the food frequently. Add the vermouth and stir it to blend the mixture. You then return the pork slices to the skillet. Spoon the mushroom mixture over the pork slices.
